Peanut Butter and Hemp Seed Protein Balls

These FODMAP friendly peanut butter protein balls are the best I have ever tasted. The recipe is from the Monash University Cookbook, so therefore fodmap friendly. So that you can make them for yourself, I have added the ingredients and instructions below. The mix is supposed to make 9 protein balls, but I make them smaller and around 15 of them.

Ingredients:

½ cup (120g/4oz peanut butter (you can use normal, or crunchy, or a mix of both)
2 tbsp maple syrup
1/3 cup hemp seeds
1 tsp vanilla extract
1 ½ tbsp oat bran
¼ cup dark chocolate chips
2 tbsp linseeds (I don’t like linseeds, so don’t add them)

Mix everything together in a bowl. Using your hands, roll into balls. If it’s a bit wet, add a sprinkle of oat bran. Put into container and place in fridge to firm up.

You can add other ingredients – crushed peanuts, cranberries, a tablespoon of cacao. Really, you can add whatever you like that is fodmap friendly.

They will also freeze – wrap individually and store for 3 months. … Wont last that long…
